The Healthy Pancake

This recipe is so easy and achievable within 15 minutes. I've recently been on a bit of health spree and have been sampling some new healthy alternatives and great recipes, this is definitely one of my best discoveries so far. 

All you need is:

-A small banana
-2 eggs
-1 teaspoon of vanilla extract
-A cup of oats 
-Half a teaspoon of butter
-A blender
-A griddle of frying pan

All you need to do is combine all of the ingredients (except for the butter) in a blender, I personally use the nutri-bullet because it's fantastic for getting at all the nitty gritty bits and creating smooth textures. Particularly with something like this when you're trying to replicate a smooth batter with different textures, you're going to want a powerful blender. 


After it's very well blended you're going to need a griddle or a frying pan, I use a griddle because it's flatter and easier to cook with for myself. When the griddle has heated up put half a teaspoon of butter and spread it around the base so you've got an even coverage. You then want to divide the batter onto the surface into four reasonably small circles. When the underneath has been sufficiently cooked keep flipping the way you would any pancake and remove them from the heat when they are a nice golden brown colour. 

I genuinely really enjoyed these, I'm not going to lie and say they taste exactly the same as regular pancakes because they don't, but I found them to be a brilliant alternative and incredibly. I think they're the closest and tastiest way your going to achieve pancakes without being fattening. You can pair these up with blueberries, dark chocolate chips, raspberries or just honey. However you do it, they are delicious, so give it a go!
